FABULOUS QUINOA BREAKFAST

This is the same recipe with 1/2 cup of pumpkin added.

2 cups water

1/2 cup quinoa

1 large apple, peeled and chopped into bite size pieces

1 ounce walnuts

1/4 cup sunflower seeds

1/4 cup raisins

2 tsp cinnamon

1/4 tsp allspice

2 Tbsp maple syrup

Put quinoa and water in a pan and bring to a boil.  Simmer for 15-20 minutes.  Remove from heat, add all other ingredients, and mix well.  Add a Tbsp or so of water and put back on heat,  cook til water is absorbed, about 10 minutes.

Makes 3 large servings, 330 calories each.

11/10/10  Today I made the same recipe, except I added 1/2 cup of pumpkin to the water and quinoa at the very beginning.  At the second part, where I added a “Tbsp or so of water,” I needed to add about 1/2 cup.  Very delicious.
