HAM AND CHEESE BREAKFAST MUFFINS

Preheat oven to 400 degrees.

2/3 cup low-fat cottage cheese

2 whole eggs

4 egg whites

3 Tbsp water

Using a whisk, mix these ingredients well.  Add and mix:

1/4 cup whole wheat flour

2/3 cup oatmeal

1 tsp baking powder

1/4 tsp salt

1/2 Tbsp splenda

Gently stir in:

1/4 cup finely diced lean ham

1/2 cup diced or shredded low fat cheddar

2 Tbsp finely sliced green onions

Spray muffin cups with non-stick spray, and divide batter between 8 muffin cups.  Bake 25 minutes.  Each muffin is 2 w.w. points.  Scrumptious!

1/17/2014–Edited version: Increased the ham to 1 cup. I sub’d oat bran for the oatmeal, and used 1 egg and 3/4 cup egg beaters (instead of the 2 eggs and 4 egg whites.) I left out the splenda. I divided the batter evenly into 6 large muffin tins and baked for 30 minutes @ 400 degrees. Each muffin is about 150 calories and has 12 grams of protein.

    Wow, this recipe is delicious!! I switched out the low-fat dairy items for fat-free, and aside from the flour, it fits the new WW “Simple Start” plan. Soooo good, and on-plan, who can complain?? Thanks for sharing!
