Almond Joy Oatmeal

1 cup unsweetened almond milk

1/2 cup old fashioned oatmeal

1/4  cup egg beaters (or egg whites)

1 Tbsp coconut

1 Tbsp mini chocolate chips

about 5 walnut halves, chopped fine

1/4-1/2 tsp coconut extract

1 date, mashed


Bring almond milk to a boil and add oats.  Cook, stirring occ. for 3-5 minutes, adding in mashed date, coconut, coconut extract, and chopped walnuts.  Add egg beaters  or egg whites carefully, stirring quickly while pouring eggs in slowly.  I usually remove the pan from the heat for this.  Then return pan to stove and cook for a minute or two longer.  Divide into two servings, and top each with 1/2 Tbsp of mini chocolate chips.  About 225 calories per bowl.

You could also use less of the add-ins, and eat the whole recipe for a hearty breakfast.  Of course, you could also use almonds instead of the walnuts…  you all know I just love walnuts.

I do believe this is the most delicious bowl of oatmeal I have ever had!
