Pumpkin Protein Snack Bars

28 grams protein powder

1/2 cup pumpkin puree

2 eggs

1 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 cup brown sugar

2 1/2 cups oatmeal

Filling: 1/2 cup pumpkin puree and 2 Tbsp agave syrup


Preheat oven to 350 degrees.  Prepare 9X9 pan by lining with parchment paper, or spraying with pam.  Mix first nine  ingredients together.  In a separate bowl, mix the other half cup of pumpkin and 2 Tbsp agave syrup.  Spread two-thirds of batter in pan.  Spread pumpkin filling on top.  Plop the other third of batter on top of filling.  Bake for 30 minutes.

Cut into 9 servings.  These bars have about 150 calories each,  3 grams fat, 27 grams carbs, 3 grams fiber, 8 grams protein, 54 grams sodium..  They are absolutely delicious as a dessert with a bit of lite cool whip or lite whipped cream on top.
