Breakfast Clafouti

Ingredients:

1/3 cup low fat cottage cheese

4 egg whites (or 1/2 cup egg beaters)

1/2 cup unsweetened vanilla almond breeze

1/6 cup dry oatmeal

sprinkle of salt and nutmeg

1/4 tsp cinnamon

1/4 tsp vanilla

1 cup pitted cherries (for apple pie version, use one small apple, peeled and chopped into bite sized pieces)

Directions:  Preheat oven to 425.  Spray pie plate with pam.  Pit cherries and place in pie plate in oven for 5 minutes.  Meanwhile, put all other ingredients in a blender and mix thoroughly.  Pull pan out of oven, make sure cherries are evenly distributed over pan, and pour batter over.  Bake until golden brown and puffy, about 13 minutes in my oven.

Makes one large serving.  Nutrition  info:  300 calories, 4.3 g fat, 38 g carbs, 5.5 g fiber, and 27 g protein.

For a dessert version, you could increase the cherries to three cups total, and sprinkle with 1 Tbsp powdered sugar before serving.  If divided into 4 servings, about 120 calories per serving.

    This looks so yummy, but what is almond breeze? I live in Australia so I have no idea. Cheers Susan

      Unsweetened almond milk. It tastes very rich but only has 40 calories per cup. You could certainly use non-fat milk. It would just add a few more calories. You can also make your own almond milk, but that seems like a little more trouble than its worth. Its definitely a delicious recipe!
