Banana Nut Apricot Oatmeal Bars

This is the larger sized bar.

This recipe is similar to the Apricot Oatmeal Bars.  Very lightly sweet.  Perfect for breakfast, or topped with a little whipped cream or froyo for a special dessert!

Ingredients:

2 small very ripe bananas, mashed

1/2 cup yogurt

1 egg

1/4 cup eggbeaters

1 tsp vanilla

8 dried apricots, cut into pieces

1/4 cup chopped walnuts

1/4 cup brown sugar, packed

2 1/2 cups oatmeal

28 grams protein powder

1 tsp cinnamon

Directions:  Preheat oven to 350.  Combine all wet ingredients and stir well.  Mix in all dry ingredients.  Spray a 9X9 pan with Pam, and spread batter evenly in pan.  Bake for 25-30 minutes.  Cool and cut into 9 squares (170 calories each) or 6 larger bars (255 calories each.)

Nutritional info for smaller bars:  170 calories, 2.5 g fat, 29 g carbs, 3.5 g fiber, 7.8 g protein and only 44 mg salt.  This recipe scored an ‘A’ on Caloriecount.com!
