Blueberry Banana Baked Oatmeal

2 cups old fashioned oats

1/3 cup wheat bran

2 Tbsp packed brown sugar

1 tsp cinnamon

1/4 tsp salt

1 tsp baking powder

2 cups blueberries, fresh or if frozen, thawed

1 banana, mashed

1 1/2 cups unsweetened vanilla almond breeze

1 Tbsp butter, melted

1 egg

1 tsp vanilla

1/3 cup chopped walnuts


Preheat oven to 375.  Lightly mist an 8X8 baking dish with cooking spray and set aside.

In a large bowl, combine the oats, wheat bran, brown sugar, cinnamon, salt, and baking powder.  In a separate bowl, stir together the milk, mashed banana, butter, egg, and vanilla.  Add the wet ingredients to the dry and stir until thoroughly combined.  Carefully fold in the blueberries and walnuts.

Pour into prepared baking dish and bake for approx. 30 minutes until top is golden.  Slice into 4 large pieces and serve.  Approx. 350 calories per serving.  (For a smaller serving, slice into 6 pieces.)  You can freeze the leftovers and re-heat in toaster oven–just like fresh baked!
