2 cups uncooked oatmeal
3 scoops lemon flavored protein powder (I use Xtreme UltraPeptide ‘Lemon Cream Pie’ protein powder)**
1/3 cup splenda granulated (NOT splenda for baking)
1/4 cup walnut butter (any nut butter would probably work)
1 cup egg beaters
1/4 cup water
zest of one lemon
3/4 cup Low Calorie Apple Cranberry Sauce (You can use any cranberry sauce. Just know that it will change the stats a bit)
Directions: Mix first 7 ingredients well. Spread in 8X8 pan sprayed with Pam. Top with cranberry sauce. Bake in 350 degree oven for 15-20 minutes. If you over bake, they will be too dry. Let cool, and cut into 8 bars.
You can also refrigerate this and eat it raw. I like it a lot this way!
**If you don’t have lemon protein powder, try substituting lemon zest and some lemon extract.
This makes a very nice breakfast treat, and kept me full all morning.
