Bare Bones Baked Oatmeal (with apples and blueberries)

Ingredients:

2 cups old fashioned oats

1/3 cup wheat bran

2 Tbsp brown sugar

2 tsp cinnamon

1/4 tsp salt

1 tsp baking powder

1 1/2 cups unsweetened vanilla almond breeze

1/2 cup egg beaters

1 tsp vanilla

1 cup blueberries

2 apples, sliced and chopped in the food processor

Directions: MIx all dry ingredients in a bowl. Add wet ingredients and mix well. Add the fruit and mix in. Spray an 8X8 pan with Pam and bake at 375 for 30-40 minutes.

Serve warm. If you like, spray a bit of butter spray on top and sprinkle with splenda/cinnamon mixture.

Six large servings, about 200 calories each.

**For Pumpkin Apple Baked Oatmeal, delete blueberries, and add 1/2 cup canned pumpkin. Decrease unsweetened almond breeze to 1 1/4 cups. Add 1 tsp pumpkin pie spice.

    I don’t think we can get ‘egg beaters’ or ‘almond breeze’ in the UK unless they are called something else. Is there a possible replacement? Thanks. Jo

      Egg beaters is just egg whites that have been processed.

      Almond Breeze is a brand name for almond milk. I always use unsweetened, as it is only 40 calories a cup. You could use any kind of milk.
