Single Lady Lasagne

1 serving Darn Good Spaghetti Sauce

1 whole wheat lasagne noodle (uncooked,) broken into 4 pieces

1/4 cup low fat cottage cheese

1 zucchini squash, sliced lengthwise (if the center is seedy, discard that part.)

1 low fat mozzarella cheese stick, grated (one ounce of cheese)

Find a single serving Pyrex bowl, spray it lightly with cooking spray, and layer the first 4 ingredients in the order listed. Repeat the layers at least once. Top with the grated mozzarella. Cover with foil and bake at 350 degrees for about 45 minutes.

Approximately 365 calories.
