Debby’s Favorite Jello Salad

Ingredients:

SF raspberry jello (4 serving size)

4 wedges Laughing Cow Lite, cut into bite sized pieces

2/3 ounce walnuts, chopped

8 oz fresh raspberries or 1 pear, chopped into bite sized pieces

Make jello according to package directions. Allow jello to cool a bit (or you can use the ice cube method,) and then add in the fruit, walnuts, and Laughing Cow lite. I portioned out the jello into four serving dishes.

Makes 4 servings, about 100 calories each.

Broccoli Salad

Ingredients:

4 cups chopped broccoli florets

3 Tbsp sunflower seeds

3 Tbsp raisins

1/4 onion, chopped

1/2 apple, chopped

3 strips bacon, pre-cooked and chopped

Dressing: 1/2 cup plain yogurt, 4 Tbsp Splenda (or sweetener of choice,) 3 Tbsp apple cider vinegar

Mix the dressing ingredients and set aside.

Chop all ingredients and mix together. Add the dressing and stir to coat.

Makes 4 servings, about 140 calories each. Keeps well in the refrigerator for several days.

Winter Fruit Salad

Ingredients:

1 cup low fat plain yogurt

1 tsp vanilla

2 tsp honey

zest of one lemon

1/4 tsp ginger powder

cinnamon and splenda to taste

2 apples, peeled, cored, and chopped

1 pear, cored and chopped

1 orange, peeled and chopped

1/4 cup dried cranberries

Mix first 6 ingredients in serving bowl. Add chopped fruits and mix well. This has lovely complex flavors.

 

VERY SIMPLE Asian Chicken Salad

Ingredients

4 oz. precooked boneless skinless chicken breast

1 Romaine lettuce crown

1/2 cup canned corn (drain well)

1 green onion, chopped fine

1 1/2 Tbsp Asian style dressing (I used Brianna’s Ginger Mandarin Dressing-delicious!)

Directions:  Chop or slice the lettuce, add the corn and the green onion, add dressing and toss well.  Top with chopped chicken.  Yumm!  Makes 1 large serving, approx. 270 calories.

Chicken Waldorf Salad

Ingredients

1 stalk celery

1/2 apple, peeled and cored

4 oz. precooked boneless skinless chicken breast

4 walnut halves

2 Tbsp yogurt

1 Tbsp honey mustard

Directions:  Chop and pulse the celery and apple briefly in the food processor.  Chop the chicken into bite sized pieces.  Chop the walnuts.  Mix the yogurt and honey mustard well, and then add all chopped ingredients and mix well.

Makes 2 servings, approx. 115 calories each!

Chicken Apple Salad

Ingredients:

Baby lettuce, or spring mix, or 50/50 spinach/baby lettuce,  3 big handfuls

1 ounce roast chicken, chopped

1 ounce goat cheese, crumbled (I used goat cheese that was coated with cranberries)

1/2 apple chopped

1 carrot grated

Dressing:  1 tsp each balsamic vinegar, mustard, olive oil, maple syrup.

Directions:  Mix the dressing in the bottom of the bowl and add the greens.  Toss to coat.  Dump the other stuff on top and eat it!
